Jamón Ibérico – Mezcal Pechuga

Savory, complex and unmistakably refined.

Crafted in Río de Ejutla, Oaxaca, this extraordinary mezcal pechuga is distilled from a blend of Espadín, Mexicano and Tobasiche maguey (Agave angustifolia, rhodacantha and karwinskii). Using a traditional single distillation in a copper refrescadera still, the spirit is infused during distillation with organic cooked and seasoned pork shoulder, locally sourced aromatic herbs, spices, and seasonal fruits. The result is a deeply layered mezcal with remarkable texture, balance, and gastronomic character.

TASTING NOTES

Appearance: Crystal clear with a bright, luminous body.
Aroma: Citrus-forward and vibrant, with notes of lime and grapefruit layered over tropical banana and subtle savory undertones.
Palate: Rich and viscous, coating the palate with umami depth. Savory flavors unfold alongside a delicate floral touch of hibiscus, finishing smooth, long, and elegant.
